Our raw milk Tomme du Valée highlights the quality of the milk collected fresh from the dairy each morning. Using traditional methods and heritage cultures, the cheese is shepherded through production to capture the essence of the Adelaide Hills. Its smooth, supple straw-yellow paste has a rich buttery flavour and a meaty, savoury finish with earthy, mushroom notes.
