Our Mont Cheval is a classic semi-hard alpine cheese that is washed twice a week for three months with Pinot Noir lees from our neighbours, Murdoch Hill Wines. The washing turns the rind a deep purple colour and, after being further aged in our cave, the Mont Cheval has a complex meaty, spicy flavour that hints at fresh grass and roasted nuts.

To ensure the fullness of flavour, our Mont Cheval is only made immediately after vintage each year and is aged for a minimum of 6 months. It is available from June to September.
