Our Sunrise is a classic semi-hard alpine cheese that is washed for three months in the Chardonnay lees of BK Wines’ amazing Pétillant-naturel before being aged further in our cave. This wash gives the Sunrise a golden rind with a fresh and fruity taste, which compliments the smooth, creamy paste and grassy, nutty flavour of the underlying cheese.
With plain crackers and fresh summer fruits
To ensure the fullness of flavour, our Sunrise is only made immediately after the Pet-Nat is racked and is aged for a minimum of 6 months.
It is available from September to December.
